Pai Mu Tan, also known as “White Peony,” is a refined specialty within the world of white tea, originating from Fujian Province, China. Derived from the Chaicha or Narcissus tea plant, this tea is loved for its delicate processing process. After picking, the leaves are simply dried, which ensures its characteristic flavor and aroma without the intervention of modern technological processing methods.

The tea leaves are striking in their appearance, with a variety of greens, a voluminous texture and numerous silver-white tips. Preparation

To fully enjoy Pai Mu Tan, follow these steps:

  1. Quantity: Use 4 to 5 teaspoons per liter of water.
  2. Water temperature: Heat the water to a temperature of 75-80°C.
  3. Steeping time: pour the tea leaves over with the heated water and steep for 1 to 3 minutes.
    • 1 minute: For a light, gentle infusion.
    • 3 minutes: For a fuller, richer taste experience.
  4. Serving: Strain the tea and enjoy the delicate, spicy notes that make Pai Mu Tan so special.
