Description

Horseradish originated in Eastern Europe but today this special vegetable is gaining popularity among Western growers and consumers. It is a cruciferous vegetable, making it related to mustard, wasabi, cabbage, broccoli, …

Horseradish has a long, white root and large, green, oblong leaves. When the root is cut, an enzyme breaks down a compound called sinigrin into mustard oil. This oil, known as allyl isothiocyanate, gives horseradish its significant aroma and pungent taste. This one can irritate your eyes, nose and throat quite a bit. Consequently, this root vegetable is sometimes called the Western pepper.

Horseradish is often confused with wasabi, another pungent flavoring common in Japanese cuisine.
