Description
White Pepper is the ripe fruit of the pepper plant. The fruits are picked after ripening and de-skinned. So White Pepper is actually the dried pulp of the pepper seeds. The taste of White Pepper is more subtle and mild than the strong taste of Black Pepper.
The pepper plant is a climbing plant native to India. After two to three years, white flowers appear on the pepper plant and develop into clusters of round berries. These berries are first green, then red and finally dark brown. Green pepper, black pepper and white pepper all come from the same pepper plant. Green pepper are berries that are harvested when they are still green. Black pepper are berries picked half-ripe and then dried.
Pepper can be found ground or as whole grains. To preserve as much of the aroma as possible, it is best to buy whole peppercorns and grind them just before use.

Pepper can be used in almost all savory dishes. Add ground pepper only toward the end of cooking time or it will taste bitter.
